Mark has been a regular feature on TV screens since 2019. From documentary series like Beyond The Menu, showcasing the best Irish restaurants and chefs, to home cooking series like Cook In, Off Duty Chef, and Cook like a Chef, Mark has proven to be an accomplished and engaging host. His series can be found on RTÉ One in Ireland and on channels in various regions around the world, including CBC in Canada, Canal+ in Spain and SBS in Australia.

Mark has a pair of award-winning cookbooks to his name, presenting his signature recipes designed for the home cook – always practical, delicious and stylish. Flavour was published in 2023 to widespread acclaim, winning the Cookbook of the Year title at the An Post Irish Book Awards. Season was published in 2024 and became a bestseller in its first week.

Mark is the recipe columnist for The Irish Times where you’ll find his writing every Saturday in the weekend magazine. Expect simple and practical recipes inspired by Mark's career, work and travel.

Roasted is the podcast where Mark chats to familiar faces about their lives using food as a hook. It can be remarkably revealing to discover what someone has in their fridge, or what the worst meal of their lives tells you about them, never mind what they served up for dinner at The White House. Expect to hear Mark gently interrogating notable politicians, sporting heroes, TikTokers and legendary broadcasters.
